Zucchini Chocolate Muffins

If you read other recipes of mine, you may know that I love sneaking veggies in sweet treats.

I already used beans, sweet potatoes, avocados and chickpeas in my recipes, but before this never zucchinis.

Zuchinis have a great effect in this muffins; they make them moist, so you don't need any fat and it will still not dry out. Zucchini are great for baking, becaise they have a neutral flavour. Like this, your guests will be surprised when you tell them about the secret ingredient!




These muffins are refined sugar free, fat free and can be made gluten free, diary free and vegan.

They are light and fluffy with a great texture and a perfect moistness.



 

yields 12 muffins


Ingredients


  • 250 g zucchinis

  • 2 eggs

  • 50 g agave syrup

  • 100 g unsweetened applesauce

  • 160 g whole wheat flour

  • 35 g cocoa powder

  • 1 tsp baking soda

  • 1 pinch salt

  • 1/2 tsp vanilla extract

  • 130ml milk

  • 100 g chocolate chips (optional)

Instructions


Preheat your oven to 180°C. Line a muffin pan with

12 paper liners or grease it with oil or butter and set aside.


Peel the zucchinis and grate them. Then squeeze them with a paper towel or it will get too wet.


Mix the eggs with the vanilla extract, the agave sirup and the apple sauce.


In a second bowl combine flour, cocoa powder, salt and baking soda.


Give the flour-mixture and the milk to the egg-mixture and combine until everything comes together and no lumps are left.


At last mix in the grated zucchinis and fill the dough into the prepared muffin pan.


Bake the muffins for about 20 to 25 minutes or until a skewer inserted in the center comes out clean.

Notes


Sweetener: In place of the agave sirup, you can use maple sirup, honey or any other loquud sweetener. If you use a granulated sweetener, you have to use a little bit more milk.


Whole wheat flour: You can also use normal all purpose flour or a gluten free flour.


Eggs: Instead of the eggs, you can use your favorite egg replacer or chia or flax eggs.


Milk: You can use any milk you like, it won't make a difference.


Add-ins: If you don't want the chocolate chips, you can leave them out or add nuts or whatever else you like to them.


*The nutritions are calculated with the chocolate chips.
