Quinoa Pesto Pizza

Pizza - everyones favorite comfort food! But if your allergic to gluten it may not be so easy to find a great crust. In this recipe I use Quinoa to get the perfect result.

This crust is nice and crunchy and topped with that pesto it just smell delicious.




The crust is made with whole Quinoa that is soked first for some hours. You don't even have to knead it like normal pizza dough.

For this recipe I used baby quiona also called kañiwa and that's why it is a bit darker.

The Pesto I made for this pizza is low fat because it would may get too fatty with the cheese on top.



 

yields one 9 inch pizza


Ingredients:


Crust:

  • 100 g quinoa

  • 50 ml water

  • 1/2 tsp baking powder

  • 1/2 teaspoon salt

Pesto:

  • 50 g basil

  • 25 g nuts

  • 25 g parmesan

  • 4 tbsp water

  • 1 tbsp olive oil

  • 2 garlic cloves

  • ½ tsp salt

Other Toppings:

  • 150 g mozzarella

Method:


Soak the quinoa in water, covering it by at least 1", for 6 - 8 hours or overnight.

Preheat oven to 220° C and line a 9" cake pan with parchment paper

Rinse the quinoa and add it then to a blender. Add the 50ml of water, baking powder and salt and blend on high until smooth and creamy.

Pour the batter into the prepared pan and bake it for 10 minutes.

Remove, flip it and return (in the pan!) to the oven and bake it for another 10 minutes until it is browned and the edges are crispy.

While the crust is baking, prepare the pesto. First toast pine nuts in a nonstick skillet over medium heat until golden.

Then add the toasted pine nuts and all other pesto ingredients to a blender or food processer.

Blend or process until smooth.

When the crust is finished, top it with the pesto, cheese or any other toppings you'd like.

Bake the pizza for 12 - 15 minutes until the cheese has melted and started to brown.

Remove it from the oven and let it cool for a few minutes in the pan.

Then you can transfer it on a cutting board. Slice and enjoy!


Notes:


Mozzarella: You can replace the mozzarella with any other cheese you like or use a vegan replacement.


Pesto: Any other pesto homemade or bought can be used in place of this pesto. You can also use your favorite marinara sauce of choice.


Toppings: Of course you can use any other toppings to create your perfect pizza, margherita style for example.
