Sweet Potato Brownies

I'm a big fan of sweet potatoes. I love them baked and stuffed with chickpeas and my homemade pesto. They are so variable, because ou can combine them with many different things. I also like it for breakfast with some greek yogurt and granola or sliced and toasted in the toaster and topped with some nut butter and a banana or berries, just delicious!

Sneeking veggies in something sweet is also a passion of mine, because when you eat it, you get all the nutritions in a healthy dessert without feeling gilty! See my recipe for the marble cake or the avocado brownies (I know those are fruits, but I mean tomatoes are too...) if you like this too!



These brownies are gluten free, paleo and can be made sugar free and dairy free too. They are also a perfect workout snack or a snack for work when you have chocolate cravings. Because they are so healthy, I also took them with me for breakfast on the go.

These are super fudgy and even more chocolatey a day after baking them.



 

yields one 8 inch square pan


Ingredients:

  • 1 medium sweet potato (you need 300g cooked flesh)

  • 100 g dairy free greek yogurt

  • 1/4 tsp vanilla extract (optional)

  • 60 g maple syrup

  • 2 eggs

  • 15 g coconut flour

  • 30 g unsweetened cocoa powder

  • 1 tsp baking powder

  • 1 pinch of salt

  • dark chocolate chips, nuts etc.

Method:


If you haven't already done it boil you potato in water or bake it in the oven or microwave until the flesh is soft. You can also use some cooked restover sweet potato from a day or two before.


Preheat your oven to 180°C and line an 8 inch square pan with parchment paper.


In a large bowl or a food processor puree the sweet potato with the greek yogurt, vanilla extract (optional), maple sirup and the eggs.


In another small bowl combine coconut flour, cocoa powder, salt and baking powder.


Add the dry ingredients to the wet and mix until everything is well combined.


If desired fold in chocolate chips or other add-ins and spread the batter evenly in the prepared pan.


Bake for 30 minutes and let the brownies cool for at least 30 min, before slicing them.

Notes:


Flour: You can't replace the coconut flour 1:1 with another flour, but since it's only a small amount, you can try it with twice as much of oat flour, white whole wheat flour, normal flour or almond flour.


Eggs: You can replace the eggs with egg-replacer or also flax or chia eggs. I don't recommed to use banana, applesauce or more mashed sweet potato, because it won't hold together well anymore.


Yogurt: You canalso use normal or non-fat greek yogurt if dairy is no problem for you. You could also try it with a flavoured yogurt like coffee or chocolate, but then you may have to decrease the amount of the maple sirup, depending on how seet you like it.


Sweetener: You can replace the maple sirup with honey, sugar free syrup or any other liquid sweetener you like.


Add-ins: You can add in whatever you like. Chocolate Chips, Nuts and also berries smell delicious, I think.
