High Protein Bean Cake

This cake is made with beans and has a lot of proteins. This is a basic recipe e and you can add any flavor you like. It can be a lemon cake, chocolate cake, berry cake etc.





It is sugar free and can be made gluten and dairy free too. The recipe is very easy, because you literally throw just everything together, put it in a prepared cake pan and bake it in the oven.



 

yields one 8 or 9 inch cake

Ingredients:


  • 500 g white beans (cooked)

  • 60 ml water or milk of choice

  • 100 g flour or whey protein

  • 2 eggs

  • 2 tsp baking powder

  • something to sweeten

Method:


Preheat your oven to 180°C and line a 8 or 9 inch round cake pan with parchment paper or grease it with some oil.

Put all the ingredients except the sweetener in a food processor and mix it into an even paste. Now taste the batter and add as much of your preferred sweetener until you like the sweetness.

Give the batter in the prepared pan and spread it evenly. Bake for about 30 minutes or until a toothpick inserted in the center comes out clean.

Let the cake cool in the opened oven for about 10 min and then take it out of the pan and transfer it on a wire rack to let it cool completely.

Top with a sugar glaze, chocolate ganache, powdered sugar or however you like it.

Notes:


Flour or whey protein/Adding flavor: You can use whole wheat flour, all purpose flour, a gluten free flour blend, oat flour or even almond flour. You can almost use any flour that absorbs about the same amount of liquid (so do not use coconut flour!). Instead of the flour, you can also use whey protein. Here you can use any flavor you like and add like this flavor to your cake. I used vanilla whey protein powdered created a Wonderfull vanilla tasting cake.

To make a chocolate cake, you can replace a part of the flour (about 25 g to 50 g, depending on how rich chocolatey you like it) with cocoa powder and use for the other part chocolate whey protein powder. If you use flour, I would use the 50 g of cocoa powder.

Sweetener: For me it didn't need anything additional to sweeten, because I used all vanilla whey protein powder and this was already sweet enough for me. If you use flour or if it is use not sweet enough, you can add any sweetener of choice. You can use granulated sweeteners like ordinary sugar, erythritol etc., but also liquid sweeteners like agave sirup, whatever you have on hand. This may change the consistence of the batter, but it won't affect the outcome much.


Add-ins: You can add in whatever you ike; chocolate chips, cinnamon powder, lemon zest and juice, berries etc. Make it to your favorite cake with your favorite flavor!
