Healthy Matcha Blondies

I don't know if you like it, but I LOVE matcha. It tastes great, it looks beautiful green and has many health benefits.

I wanted to bake something with matcha powder for a long time now, but I didn't know what exactly. I also wanted to put some chocolate in it, because that's a great combo.

So that's when I came to this super healthy recipe.



It is dairy free and also gluten-free, because I don't use normal flour, instead I use oat flour. You can easily make your own by grinding rolled oats.

As sweetener I used dark brown sugar, that gives it a very good taste and reminds you a little bit of cookies.

I also put some dark chocolate chips into it, but you could use any chocolate you like. White chocolate would probably also taste very good.

For the perfect texture it also needed some fat. Here I used coconut oil and don't worry to all the coconut haters: You can't taste it at all, but if you wan't you can also sub any other oil for it.

 

yields one 8 inch square pan


Ingredients:

  • 100 g dark brown sugar

  • 90 ml plant based milk

  • 70 ml coconut oil

  • 2 eggs

  • 150 g oat flour (gluten free if needed)

  • 2 tbsp matcha powder

  • 1/4 tsp salt

  • 1 tsp baking powder

  • 100g dark chocolate chips

Method:


Preheat your oven to 160°C and line an 8 inch square pan with parchment paper.


In a large bowl whisk together sugar, milk, oil and eggs until they are all combined.


In another bowl combine flour, matcha powder, salt and baking powder.


Add the dry ingredients to the egg-mixture and mix until everything is well combined.


Fold in the chocolate chips and spread the batter evenly in the prepared pan.


Bake for 25 to 30 minutes, until a toothpick inserted in the center comes out clean.


Let the Blondies cool for about 20 min, before slicing them in 12 pieces.

Notes:


Flour: You can replace the oat flour with white whole wheat flour or normal whole wheat flour.


Milk: You can use any milk you like. If it doesn't have to be dairy free, just use normal cow milk.


Sweetener: I guess you could use an equal amount of white sugar if you don't have brown on hand or to make it sugar free by replacing it with erythritol, swerve sweetener or xylitol. I bet coconut sugar would also give it a great taste.


Add-ins: You can replace the dark chocolate with any chocolate you like or leave it out completely if you want to. You can also add in some nuts for a little crunchiness.
