Egg Loaf

Have you ever heard of the famous "egg loaf"? This bread is perfect for sandwiches, french toasts and everything else you like, but couldn't have because of your diet.

This bread is super low in carbs and tastes sooo delicious. You can eat it with either something sweet or savory.

It is called "egg loaf" because it has a lot of eggs in it, but don't worry; it won't taste eggy.




This bread is low carb, keto, gluten free and nut free.

This is probably one of the easiest bread recipes ever.

With almost no effort, you get this wonderful bread which you can eat for breakfast, lunch and dinner.



 

yields one 8×4 (or 9×5) inch loaf cake


Ingredients


8 eggs

200 g cream cheese

1 tsp baking powder

1/2 tsp baking soda

1/4 tsp salt

30 g coconut flour

Method:


Preheat your oven to 180°C and line a 9×5 inch loaf pan with parchment paper or grease it with some oil.


Mix all the ingredients together until everything is well combined.


Bake for about 40-45 minutes, until a toothpick inserted in the center comes out clean.


Let the bread cool about 5 minutes before removing it from the pan.


Slice and enjoy with whatever you like!



Notes:


Flour: You can't replace the coconut flour with another flour because it is important for the texture.

Add-ins: To give the bread some flavor, you can add in some spices and herbs; garlic powder and basil for example.

Cream Cheese: You can use a fat reduced cream cheese for a lighter version or use a dairy free substitution.


Please note that my bread is a bit flatter because I filled some of the dough in smaller bread bun pans.

I baked them for 25 minutes.
