I just love this chocolate chip cookies! They are chewy and smell like heaven, sooo delicious!
If your feeling down a bit or have some friends coming over, these are just perfect!
They are also great to take with you to work as a delicious healthy snack.
These cookies are gluten free, low carb, keto and paleo.
They are very easy and quickly to make.
yields 16 normal sized cookies
Ingredients
2 tbsp coconut flour
200 g blanched almond flour
100 g Xylitol
1 1/2 tsp vanilla extract
1/2 tsp baking soda
2 eggs
4 tbsp coconut oil
150 g (sugar free) chocolate chips

Instructions
Line a baking tray with parchment paper and preheat you oven to 180°.
Mix the egg with the coconut oil, the vanilla extract and the xylitol.
Add the coconut flour and the baking soda and combine just until everything comes together.
Mix in the almond flour until everything is well combined.
At last, fold in the chocolate chips.
Form 16 balls on the parchment paper and flatten them out as they don't spread that much.
Bake for about 7 to 12 minutes until they are golden and look finished.

Notes
Sweetener: You can replace the xylitol with any other granulated sweetener of your choice.
Coconut flour: You can replace it by using the doubled amount (this means 4 tbsp) almond flour. Please note that the texture will change a bit.
Almond flour: The best way to substitute it is with tigernut flour. You can also replace it of course with other nuts or seeds.
Add ins: Instead of the chocolate chips you can also add chopped nuts or dried fruits.
