Have you ever heard of chocolate avocado pudding? After I saw a very ripe avocado in my kitchen that was too ripe for an avocado salad, because it was too soft, I decided to give the avocado pudding a try. I just put some ingredients I had on hand in a blender and I have to say that it is sooo delicious. The great plus is also, that it is super healthy too!
The only thing that you have to look after, is that the avocado is not under ripe, or you'll end up with chunks and not over ripe, because then it won't taste good anymore.
This pudding is vegan, refined sugar free, paleo, gluten free and can be made low carb and keto too.
The recipe is very quick made and is best eaten fresh. I recommend to eat it within not more than 12 hours and to store it in the fridge, because else you'll be able to taste out the avocado and the bitterness of the cocoa powder.
yields enough for 2 servings
Ingredients
20 g cocoa powder
1 ripe Avocado (150 g to 200 g)
2 to 4 tbsp almond milk
60 g maple syrup

Instructions
Halve the avocado and add the flesh to your blender or food processor.
Add 2 tbsp of the almond milk and the other ingredients. Blend starting on low and then moving up to high speed until it is smooth and creamy.
If you want it creamier add 1 to 2 tbsp of the milk and mix again.
Now taste the pudding if it is sweet enough for you and if it tastes enough chocolatey. You may add some more cocoa powder and maple syrup until it's perfect for you.
Devide the pudding in two small bowls and if not eaten right now, store them in the fridge for up to 12 hours.

Notes
Sweetener: You can replace the maple syrup with honey or other sweeteners. Liquid sweeteners work best, but you can also use granulated sweeteners like xylitol to mak low carb and keto.
Almond milk: You can replace the almond milk with any other milk you like. I guess that coconut milk would taste great too for a coconut avocado chocolate pudding.
Add-ins and toppings: To make it even more chocolatey, you can add in some grated chocolate. You can also top it with some fresh berries or slivered or chopped nuts. For a coconut version you can add a bit of desiccated coconut along with the coconut milk. I also tried it with some nut butter in it and it was sooo goooood.
