Chocolate Chip Banana Bread

This banana bread is just great. It is moist, delicious and very healthy. Just the perfect comfort food.

It is also very variable. I tried this recipe already plain and with chocolate chips. One time, I divided the batter in two parts and put in one half some matcha powder and another time some cocoa powder to create a marble banana bread.




This cake is gluten free, sugar free and can be made paleo and dairy free too. It also doens't contain any sugar except the fruit sugar from the banana itself.

I recommend to use very ripe bananas with lots of brown spots as this will yield the sweetest bread.

It is a very simple recipe and is pretty quickly made.



 

yields one 8×4 (or 9×5) inch loaf cake

Ingredients


  • 3 bananas

  • 4 eggs

  • 75 g greek yogurt

  • 1 1/2 tsp baking powder

  • 1/2 tsp baking soda

  • 1 tsp cinnamon

  • 1/4 tsp salt

  • 50 g coconut flour

  • 25 g arrowroot starch

  • 100 g (unsweetened) chocolate chips

Method:


Preheat your oven to 180°C and line a 8×4 (or 9×5) inch loaf pan with parchment paper or grease it with some oil.

Combine all the dry ingredients in a large mixing bowl: coconut flour, salt, baking powder, baking soda, cinnamon and arowroot starch. Put it aside.


In a blender or food processor puree the banans, the eggs and the greek yogurt until you have a smooth dough.


Combine it with the dry ingredients and mix until everything is well combined.


Ad the chocolate chips and our the batter evenly in the prepared pan.

Bake for about 45-50 minutes, until a toothpick inserted in the center comes out clean.

Let the bread cool about 5 minutes before removing it from the pan.

Notes:


Flour: You can't replace the coconut flour with another flour because it is important for the texture.

Add-ins: Instead of the chocolate chips you can add some nuts. You can also leave it out and eat it plain as normal banana bread or you can mix in one half of the batter some cacao or matcha powder.


Greek Yogurt: Instead pf the greek yogurt you can use a dairy free substitution of your choice.
