Baked Donuts

These are the best healthy baked donuts that everyone loves. You can fill them with whatever your heart desires or put a glaze on them.

They smell delicious like ordinary yeast donuts, but on the contrary they are a lot healthier and not fried in a lot of oil.

These donuts are super light and fluffy.




These donuts are gluten free, low carb and keto and can be made paleo.

It is a simple recipe that you can top (and fill) with whatever you like.



 

yields 16 donuts

Ingredients


  • 75 g coconut flour

  • 1 tsp honey/sugar

  • 1 tbsp dry yeast + 1 tbsp warm milk

  • 2 tsp baking powder

  • 100 g greek yogurt

  • 6 eggs

  • 3 tbsp milk

  • 1 tsp vanilla extract

  • 100 g xylitol

  • 1 pinch salt

Method:


Preheat your oven to 160°C and grease a donut pan (mine are 2.7 inches = 7cm in diameter) with some oil.


Combine the yeast with the honey or sugar and the warm milk.

In a big bowl beat the eggs with the rest of milk, the honey, the greek yogurt and the vanilla extract.

Add the coconut flour, the baking powder and the salt and combine.


Then add the yeast mixture and combine again until you have a smooth batter.


Taste the batter to see if it is sweet enough for you and might add more if needed.


Let the dough proof on a warm place for about 30 minutes.

Pour the batter evenly in the greased donut holes. Here you can add a filling of your choice if desired.

Bake for about 20 minutes, until a toothpick inserted in the center comes out clean.

Take them out of the pan and let them cool on a wire rack. Add a glaze of choice when they are fully cooled down.

Notes:


Flour: Sadly you can't replace the coconut flour with another flour in this recipe.


Greek yogurt: To make them diary free, just use a diary free substitution for the greek yogurt, this won't make a difference.

Sweetener: You can replace it with any other granulated sweetener. The only "real sugar containig sweetener" you can't replace is the tsp of sugar that you mix with the yeast and the almond milk, because it is neccessary for the yeast to proof.

Filling: You can fill them with nut butter, jam, chocolate spread or whatever your heart desires.

Glaze: On the picture these donuts are plain but later I topped them with my basic vegan chocolate glaze. A normal sugar glaze or a chocolate ganache work great too, just top them with whatever you like!
