Almond Cookies

The perfect snack for when your feeling a little bit hungry: nuts. But only nuts as they are can get boring real quick. So here I have the perfect snack that contains almonds since they are so healthy. They are packed with nutritions, healthy fats, antioxidants, vitamin E, fibres, magnesium, plant protein and lots more.

These cookies are very filling, so when you're in the middle of the day and need asap something to eat, because your belly is making itself noticeable, these are perfect.




These cookies are gluten free, dairy free, low carb, keto and paleo! They are very easy to make and a great healthy treat for everyone.

If you use almond flour, the texture will be finer as when you use almond meal. I used almond meal and I really liked it like this, but use whatever you prefer or have on hand.



 

yields 12 cookies

Ingredients


  • 200 g almond flour or almond meal

  • 1 egg

  • 3 tbsp melted coconut oil

  • 3 tbsp xylitol

  • 1/2 tsp cinnamon

  • 1 tbsp almond butter

*for substitutions see notes below

Instructions


Preheat your oven to 200°C and line baking tray with parchment paper and set aside.

Combine almond flour, xylitol and cinnamon. Put it aside.


Add the egg, coconut oil and almond butter and mix until everything is well combined.

Form out of the dough about 9 balls and put them on the prepared baking tray. Flatten them out, because they don't really spread. The thinner you make them the crispier they get and the thicker the chewier.

Bake them for about 10 to 15 minutes, until they are golden.

Let them fully cool so they can set.

Notes


Sweetener: To sweeten these cookies you can replace the xylitol with any granulated sweetener of your choice, such as coconut sugar, erythritol etc.


Almond flour or meal: Of course you can replace the almond flour with any other ground nut or seeds, if you're allergic to them. In result they just won't be almond cookies anymore.


Almond butter: Same goes for the almond butter; use whatever nut butter or seed butter you like.
